Located in the revived warehouse of The Cannery in Rosebery, the 240-seat venue is home to a spectacular dining room, expansive bar and open kitchen. The team, led by Brody Petersen, have collaborated with the renowned Alexander & Co to design the space, drawing inspiration from the site’s rich heritage and New York’s Meatpacking District.
The venue is captained by Group Executive Chef Regan Porteous and Head Chef Marcelino Papio, serving up a Japanese influenced menu alongside modern Australian flair with a diverse drinks offering to match. The duo has created two distinct menus for the restaurant – fast, fresh and a la carte for lunch and a more extensive, shared concept for dinner – both reflecting Porteous’ and Papios’ unique approach to modern Australian fare. Stanton & Co. has a strong focus on cocktails, alongside an approachable and balanced wine list and a premium craft beer selection.
